What Is Potassium Sorbate?
Potassium sorbate, CAS 24634-61-5, EC 246-376-1, is the water-soluble potassium salt of sorbic acid. It inhibits moulds and yeasts and is one of the most widely used preservatives in cheese, baked goods, beverages, wine, sauces and cosmetics.
The specification sets assay 98.0–101.0%, loss on drying ≤1.0%, heavy metals as lead ≤10 ppm and arsenic ≤3 ppm. Acidity and alkalinity are each about 1%.
It is not regulated as dangerous goods. It works best below about pH 6.5. Food use requires a grade and documents that meet the rules of the destination market.
