What Is Potassium Bicarbonate?
Potassium bicarbonate (potassium hydrogen carbonate), CAS 298-14-6, EC 206-059-0, is a mild alkali. It is used as a sodium-free leavening agent, pH regulator and potassium source in foods and beverages, and in effervescent products and wine making.
The specification sets assay 99.0–101.5% on a dry basis and loss on drying below 0.25%, with limits on lead, arsenic, cadmium and mercury.
It is not regulated as dangerous goods. Food use requires a grade and documents that meet the rules of the destination market.
