What Is Sodium Tripolyphosphate (STPP)?
Sodium tripolyphosphate (STPP, pentasodium triphosphate), CAS 7758-29-4, EC 231-838-7, Na5P3O10, molecular weight 367.86 g/mol, is a phosphate that binds metal ions and improves water retention in meat and seafood. It is also a builder in detergents and a dispersant in ceramics.
The specification sets assay ≥95.0%, P2O5 ≥57.0%, heavy metals as lead ≤0.001%, pH 9.5–10.5 and water-insoluble matter ≤0.05%.
It is not regulated as dangerous goods. Food use requires a grade and documents that meet the rules of the destination market.
