What Is Sodium Erythorbate?
Sodium erythorbate (sodium isoascorbate), CAS 6381-77-7, EC 228-973-9, is an antioxidant. In cured meats it speeds up curing and stabilizes colour, and it is used to prevent browning and flavour loss in beverages, fruit and vegetables.
The specification sets content ≥98.0%, pH 5.5–8.0, specific rotation +95.5 to +98.0°, loss on drying ≤0.25% and lead ≤5 mg/kg.
It is not regulated as dangerous goods. Food use requires a grade and documents that meet the rules of the destination market.
