What Is Collagen Casing?
Collagen casing is formed from animal collagen into a continuous edible tube. Rolled formats are listed in calibers of 10–16 mm; shirred formats are listed in calibers of 17–28 mm. Product selection takes account of processing method, casing diameter and the required length per roll or stick.
The specification covers physical appearance, dry-basis protein, moisture, ash, fat, humectants and microbiological parameters. Carton configurations vary by caliber. Closed storage at the stated temperature and humidity maintains the supplied casing condition.
