What Is Citric Acid Anhydrous?
Citric acid anhydrous, CAS 77-92-9, is citric acid without water of crystallization. It is preferred in dry mixes, effervescent tablets and powdered drinks, and is used as an acidulant, chelating agent and cleaning acid.
The grade has assay 99.5–101.0%, with limits on moisture, ionic impurities and metals.
It is not regulated as dangerous goods. Food use requires a grade and documents that meet the rules of the destination market.
