What Is Capsicum Oleoresin?
Capsicum oleoresin, CAS 8023-77-6, is a concentrated chilli extract that provides pungency (heat) in seasonings, sauces, snacks and prepared foods. It gives consistent heat without the variability of ground chilli.
The grade has at least 1,000,000 SHU and a maximum colour value of 10,000 CU, with limits on metals and residual solvents. SHU measures pungency and is not a capsaicin mass percentage.
The concentrate is very pungent, so avoid skin and eye contact and inhaling vapour. Food use requires a grade and documents that meet the rules of the destination market. No therapeutic, pesticide or defence-spray claims are made.
